Under a Painted Sky Month continues for the FYA Book Club with some seriously tasty business -- courtesy of author Stacey Lee herself! Here's the recipe for Annamae's signature dish.
She hazards half a twist in her saddle and casts me a sly glance. "That's not all I can do. I used to be a cook, too."
"Cook, huh?" says Cay. [...]
"Cobbler's my specialty."
Annamae's Blackberry Cobbler (serves 8)
— modified to suit modern kitchens
1 stick (½ cup) butter
1¼ cup sugar [1]
1 cup self-rising flour [2]
1 cup milk
2 cups blackberries (chokecherries can be used if one is in a pinch) [3]
Melt butter. Pour 1 cup of sugar [4] and flour into a mixing bowl, whisking in milk. Mix well. Then, pour in melted butter and whisk it all together. Butter a 9-inch round baking baking dish.
Now rinse and pat dry the blackberries. Pour the batter into the buttered dish. Sprinkle blackberries over the top of the batter then sprinkle ¼ cup sugar over the top. [5]
Bake in the oven at 350°F for 1 hour, or until golden and bubbly. [6] If you got a sweet tooth, sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it’s done.
Now let it cool before you eat it, or you'll burn you's lips off.
[1][4][5] I made a less-sweet version by only adding ½ cup sugar to the batter. I also accidentally omitted the sprinkled sugar on top, since I was so amazed that the recipe took v. little time to put together that I quickly popped the whole thing into the oven once the blackberries were on. Fortunately, that suited my sweetness-fearing eaters just fine, so you can totally adjust the sugar content to your own liking.
[2] As per this substitution for self-rising flour, I used a mixture of 1 cup all-purpose flour, 1½ tsp baking powder, and ¼ tsp salt instead.
[3] And if you're in even more of a pinch, you might be able to get away with less than 2 cups. I actually ran out of blackberries, since I waited too long to use them and half of them had already gone bad. Not only did I have to use my remaining blackberries strategically, but I realized too late that HA HA I might not have known what a blackberry cobbler is supposed to look like, and I definitely did not sprinkle as instructed. (Not exactly TragicLee catastrophic, but still.) So if you're wondering why my finished product bares little resemblance to a blackberry cobbler... well, now you know.
[6] It only took mine about 35 minutes to reach this point, so keep an eye on the oven!
